A single barrel becomes uniquely yours, and the expression of the tequila can only be enjoyed at your restaurant. Exciting, right?!

A barrel of tequila holds about 220 bottles. That’s a lot, so you should consider whether you really need that much or if a regular reposado tequila would suffice. It’s easier to be sure of the smaller amount, but it wouldn’t be as cool.

This is why we partnered with El Tesoro to create a single-barrel reposado tequila, “Truluck’s Seleccion,” that is to-die-for.

How do you make a good single-barrel tequila? Well, you need to start with an excellent blanco tequila that’s additive-free. El Tesoro is 100% blue agave, with no additives, and, thanks to their traditional approach at their distillery, they don’t even need to use yeast, as fermentation begins naturally.

El Tesoro is staggeringly excellent tequila produced at La Alteña distillery, NOM 1139, located in the Highlands of Jalisco. NOM stands for Norma Oficial Mexicana, and this number on a tequila bottle indicates a unique four-digit code identifying the specific distillery where the tequila was made. It ensures the product meets Mexican government standards for authenticity, quality, and origin within the Denomination of Origin (DO). This serves as a distillery ID, ensuring traceability and compliance with regulations set by the Tequila Regulatory Council.

El Tesoro was founded in 1937 by the Camarena family, and today the master distiller is third-generation Jenny Camarena.

With tequila production, everything begins in the fields, and El Tesoro uses only their estate-grown blue agave from the red, mineral-rich soil in the Highlands of Jalisco. The Highlands contribute to El Tesoro’s slightly smoky, agave-forward flavor. Tequilas made exclusively with Highland agave tend to be rounder, fruitier, and more floral. Additionally, El Tesoro employs four “Jimadores” who cultivate and select only slightly overripe agaves for harvest. They do not pick agaves just because they are old enough; they choose them because they are slightly overripe—one plant at a time—harvesting as they go, all by hand.

The Highlands also impart a level of acidity to the agave, delivering a complete and complex flavor. Just like in winemaking, we don’t use table grapes solely for their sugar; we use vinifera (wine) grapes, which are tart, rich, and full of tannins. The same applies to the mature blue agave of El Tesoro. These hand-selected agaves create a very complex tequila.

The Traditional Tahona Wheel Method

El Tesoro harvests and processes the agave by hand, carefully removing any material that could make the tequila bitter, and slowly roasts it in traditional “hornos” (brick ovens) over three days. Then they crush the agave with a two-ton volcanic Tahona stone wheel, breaking down the fibers to reveal the pulp and juices. They are one of the few distilleries that exclusively use a Tahona wheel.

This ancient method is very inefficient but essential to tequila’s complex flavor. They use all the agave during fermentation, including the pulp, in open-top wooden containers. Then they use unique copper stills for distillation, adding even more complexity. El Tesoro is the only tequila distillery in the world to double distill its tequila to 80 proof without adding water. This means they do not dilute El Tesoro’s final agave-forward flavor.

Now we have nearly perfect blanco tequila. To make reposado, they age tequila in ex-bourbon barrels for about 9 months, adding even more complexity without masking the gorgeous agave flavors. Our single barrel has a distinct note of white pepper that guides you to fruity and floral notes, followed by a delightful herbaceousness, all complemented by lightly smoked tea flavors and a long, long finish. Wow!

I chose this barrel because of the Goldilocks principle… “It was juuuust right!” It’s wonderful on its own, showcasing itself as a world-class, unique tequila, but I also knew it would be amazing in cocktails.

Inspired by the classic Manhattan, this cocktail makes the tequila the star and turns the Martini experience on its head. It’s not to be missed.
