For Blake Goldie, a passion for hospitality is deeply rooted in his family and upbringing. The son of a chef, Blake recalls his mother preparing remarkable dishes inspired by Polish, Hungarian, Slovakian, and Romanian cuisine. These meals were rich in tradition and care, leaving a lasting impression and showing him how food can connect generations.
By age 14, Blake was already working alongside his parents in restaurants, inheriting the love for hospitality and service that has guided him ever since.
“It’s in my family’s bloodline,” he says. And it shows.

A Journey Fueled by Curiosity
Despite being destined for a life in restaurants, Blake’s path wasn’t always so clear. He changed his major four times in college before realizing his future was in business, with a focus on the hospitality industry.
After graduation, Blake headed to Las Vegas, where he immersed himself in the energy and excitement of the Strip. He worked as a flair bartender and master mixologist at a major hotel, sharpening his craft and his ability to connect with guests. His passion and instincts earned him a promotion to Director of Food & Beverage, where he managed operations and found his voice as a leader. From there, Blake continued climbing, serving in leadership roles in fast-casual dining before pivoting to a prestigious country club, where he earned his sommelier certification.

Finding the Perfect Fit at Truluck’s
Hungry for a new challenge, Blake found Truluck’s Rosemont at exactly the right time. He sensed a clear cultural alignment from the very first conversation. Then came an invitation to family dinner, where Blake experienced firsthand what sets Truluck’s apart: unparalleled service, exceptional attention to detail, and a team that genuinely cares for one another and truly lives its values.

Growing as a Leader
Every day at Truluck’s Rosemont, just outside of Chicago, Blake conducts an orchestra of hospitality professionals to create unforgettable dining experiences. Drawing on lessons from his father, Blake’s role as General Manager has shaped his philosophy as a servant leader: treat others the way you want to be treated, honor every guest, and never forget that someone chose to spend their hard-earned money on you.

He’s learned to manage with empathy — seeing the values, differences, and strengths people bring to the table, and understanding how those elements all contribute to the performance of the team — while helping build a supportive culture where greatness is the expectation. Blake loves being constantly challenged by those around him, further sharpening his skills and pushing him to grow.
In the years ahead, he hopes to become a partner with the company and help develop the next wave of strong leaders, like the ones who have taught and inspired him along the way.

Adding a Personal Touch
Rather than relying on scripted interactions, Blake believes hospitality should feel human. He personalizes every experience, using guests’ names and thanking them for allowing Truluck’s to be a part of their special celebrations. Finding these moments of genuine connection is second nature to Blake, having grown up in restaurants, but the feeling never gets old.

Hospitality Never Clocks Out
Blake somehow ends up as the chef at every family function, whether he’s cooking on the grill or mixing cocktails behind the bar. When hosting at home by the pool, he proudly takes on the role of margarita man. And every year at Christmas, Blake’s hospitable spirit truly shines. He’s affectionately known as “Clark Griswold” among friends and family, as well as the go-to “prime rib guy.” It’s no surprise that the year’s most significant family gatherings and most memorable moments tend to happen at Blake’s house.

A Lasting Impression
Whether he’s leading his team, welcoming guests, or helping create meaningful moments, Blake understands that hospitality is about more than food. It’s about people, memories, and connection. He’s a passionate expert, a thoughtful leader, and a true steward of our culture, and we’re proud to have him as part of the Truluck’s team.
