Crafting a Better, More Sustainable Experience
Eating, Drinking & Living Our Values
April 2025
At Truluck’s, our commitment to sustainability inspires everything we do. From the big decisions like partnering with responsible purveyors, to the smaller touches like squeezing our own juice, it all adds up to a superior experience that honors the plate, the palate, and the planet.
Indulge with integrity
We believe that a love of seafood and good stewardship of ocean ecosystems go hand in hand, and the same holds true on land. Our extensive and diverse wine list features a growing number of offerings from certified biodynamic and sustainable wineries, which take a more natural approach to cultivating grapes and crafting wines, with minimal use of chemicals or additives. They’re wonderful stewards of the land, and we’re excited to share these beautiful expressions of unique vineyards with our customers. Some of our favorite biodynamic offerings include Feudo, Montoni, Grillo, Italy, Darioush, Merlot, Napa or Cade, Cabernet Sauvignon, Howell Mountain, Napa, now available at Truluck’s restaurants.
A more mindful cup
Like wine, the coffee we drink is a labor of love for farmers and artisans, and for many of them, sustainability is a key consideration. The coffee program at Truluck’s strives to support their noble efforts by partnering with roasters who source whole-bean coffees directly from farms prioritizing environmental responsibility. You won’t find any disposable plastic pods here. Just freshly ground coffees, roasted exclusively for us and brewed just for you.

Always worth the squeeze
Cutting down on waste is an essential part of running a more sustainable restaurant, so we’re always looking for new opportunities to do things ourselves and reduce unnecessary packaging. Our in-house juice program is a great example. Juicing our own citrus and other seasonal produce for our hand-crafted cocktails not only helps us cut down on packaging waste, it’s just better. One sip of a guest-favorite TRU Story cocktail with freshly pressed pineapple, guava, and lime and you’ll agree — what’s most responsible is also what’s most delicious.
Seafood You Can Feel Good About
When it comes time for the main event, you can be sure that the seafood and crab you select have been ethically sourced in strict adherence to Ocean Conservancy guidelines. The fish for our iconic Miso-Glazed Seabass dish, for example, is always Marine Stewardship Council-certified, which guarantees it comes from responsibly managed fisheries with minimal environmental impact.
Our Scallops are sourced from multi-generational fisherman in New Bedford, Massachusetts who go to great lengths to preserve marine ecosystems and the integrity of the products, never treating their scallops with chemicals to increase weight.
And when harvesting Florida Stone Crab, a crown jewel of the Truluck’s menu, our crabbers use humane wooden traps and carefully remove only one claw, allowing it to naturally regenerate and ensure the sustainability of the crab population.
By insisting on responsible choices for decisions big and small, Truluck’s is helping make sure we can all enjoy the finest of sea and land for generations to come. Make a reservation to visit us today. Your table is waiting.
