TRU All Natural Sea Scallops
At Truluck’s we don’t like to brag, We like to have our products speak for themselves like our All Natural Sea Scallops. These scallops lend a naturally sugar-sweet flavor with a firm texture. Our scallops are respectfully handled by our chefs and simply prepared as they take center stage on our menu.
Our scallops are sourced from the North Atlantic Coastline of the United States where some of the best seafood is harvested for the world to enjoy. This is home to the best and most reputable natural scallop producers in the United States. These boats are run by multi-generational fishermen who take a huge amount of pride in their craft and are insanely protective of the resource, never treating them with anything but care and effort. Lots of scallops on the market are treated with a sodium solution which allows them to take on water weight, appear bigger and sell for more. This is a big deal because no one wants anything in their food that shouldn’t be there. It is apparent that scallops are treated when you cook them and the liquid or purge causes them to shrink as well as making it hard to caramelize their natural sugars. This compromises the cell structure so the muscle itself becomes jelly like. Responsible naturally sourced high quality fresh fish produces a winning combination for sustainability—something Truluck’s always keeps in mind.
Proper sizing is important to us—especially when it comes to scallops. Our scallops are U10s, meaning they’re less than 10 per pound. U10s represent the most priced and sort after size of the scallops on the market. We want to bring you the best quality available, and the bigger the better.
Scallops are one of the oceans treasures and can be simply sliced and enjoyed as a crudo or cooked by many means but our favorite is sauteed or pan seared. They are delicate, and when cooked correctly, their natural sugars caramelize and produce a sweet briny flavor with depth and complexity. Over time, it has become standard practice for restaurants to blast scallops over high heat to get that signature golden brown crust that everyone desires, but that’s not actually the best way to achieve a perfectly cooked scallop. Scallops are full of natural sugars, so the crust should be achieved by caramelizing. Using high heat and oil just fries them, whereas low heat and a teeny tiny bit of oil properly cooks this dish. The important thing to remember is, keep it fresh, properly handle the scallops and simply prepare them so not to mask the true nature of what you have given so much effort to sourcing and serving. Cooking them this way doesn’t require any more time! just attention, respect and a little passion, but it’s worth it.
